Thyme & Tide showcases Chef Lee Lake’s passion for food. Having grown up on the coast in Cornwall, his love for the sea and fishing has played a large part in helping to shape him as chef.

Lee’s inspiration for food comes from his travels around the globe which he uses to showcase the abundant local produce and fresh seafood available in our wonderful county. Think vibrant, colourful salads; huge pans filled with hearty rice dishes cooking alfresco such as kedgeree, paella, nasi goreng and seafood jambalaya; fresh locally caught fish marinated with spice blends cooked on chargrills; and Cornish lobsters drizzled with flavoured butters and served on crisp salad. His vegetarian dishes include shakshuka, and portobello mushroom and Halloumi burgers with homemade tomato and chilli jam.
