The day is an informal, friendly, fun way to learn more about cooking fish from Chris Sherville, chef and patron of the famous Port Eliot festival Seafood Restaurant. Using the freshest fish and produce from the Estate, learn how to cook beautiful but inexpensive fish recipes, for example slow braised mackerel Thai style, Vietnamese squid salad, razor clams with chorizo, perfect Moules Marinieres. Included will be a wine tasting before lunch in the magnificent Round Room. The day will end with afternoon tea and cakes and the opportunity to look around Port Eliot, and walk in the gardens.
“Fish is as good for us today as it has always been, yet as an island nation we eat remarkably little compared with the countries of Europe and the Mediterranean,” says Chris. “The increasingly expensive species like monkfish, turbot and lobsters are now reserved for special occasions and the fish at the lower end of the price scale are often overlooked because of their history and some dubious, culinary associations.
“But taking a leaf from the cookbooks of the Far East and the Med, we can turn the traditionally difficult into simple good food. With varying techniques, perhaps not normally thought of with fish, like long braising, we can discover new depths to old favourites and using the quality that fish has of being able to cook it quickly we can retain the freshness and flavour, allowing the variety of inexpensive fish to be a more regular part of our kitchens.”
