In May 2016, amateur chef and foodie Miguel Barclay took to Instagram to share the gourmet recipes he had produced for less than £1 per person. Mere months later, Miguel has amassed over 135,000 Instagram followers, with each video seen by 25,000 viewers in less than an hour, and he has appeared on national television to demo his recipes. His new book, One Pound Meals, is a collection of beautiful recipes, the majority of which are brand new to the book, all for £1 or less.
Miguel was initially fascinated with stripping back dishes to their core ingredients, interested only in maximising flavour while minimising the components. During the process, he noticed how the prices of his dishes were decreasing, cooking times were reduced, and recipes simplified as he discarded unnecessary ingredients. Thus One Pound Meals was created. Quick, simple and full of flavour, there are recipes for every one and every occasion from an aubergine dal to fish cakes, beef lasagne and chicken and mushroom pie.
